We love a weaning recipe that can suit all the family and this one is perfect! Ideal for serving in a Doidy Cup or Bowl and can be whizzed smoother for little ones. You can also use seasonal vegetables making it a favourite all year round. Enjoy!
1 tablespoon of olive oil
½ onion, diced
1 carrot, peeled and chopped
½ leek, chopped
1 stick of celery, chopped
1 tablespoon of chopped flat leaf parsley
1 large potato, peeled and diced
4 large cabbage leaves, shredded
1 teaspoon of mixed herbs
1 litre of low salt chicken stock
1 tablespoon of tomato puree
50g orzo pasta or other mini pasta shapes
2 tablespoons of frozen peas
Lightly fry the onions in the olive oil for 2 mins and then add the carrot, leek, celery and continue to cook for a further 5mins. Then add the cabbage, herbs, parsley and stock and simmer for 10 mins. Add the orzo and peas and cook for a further 10 mins.
To make this into a smoother soup, mash it with a fork and add a little more stock or breast/ formula milk. This is delicious with a little grated cheese on top!
